“It is an exceptional house with a true family spirit, true values of loyalty and a form of quintessential luxury in simplicity. I was able to blossom my cooking there.” The words of Chef Eric Frechon pronounced almost two decades after he took the reins of this institution of French art de vivre actually relate the fulgurating nature of his gastronomy. Because his three Michelin stars, the grail of the kitchen, Chef Eric Frechon went looking for them as soon as he arrived, in 1999. Despite its legend and reputation, the restaurant at the Bristol had never been crowned with stars.
