Newly opened in Paris, Alléno & Rivoire is the meeting between the master chef Yannick Alléno and his pastry chef Aurélien Rivoire… A summit meeting that leads this time to an unprecedented agreement between Champagne and chocolate. Both chefs have indeed seized the opportunity of Mother’s Day in order to achieve a long-awaited gustatory partnership.
For the first time in the history of gastronomy a high-flying dialogue can be established between chocolate and champagne. With the block Terroirs de France, especially created to be perfectly as agreed with Champagne Moet & Chandon Impérial, Alléno & Rivoire also offers a unique moment of tasting for Mother’s Day.
A celebration of maternal love which is shown in a champagne & chocolate small box. And a tasting described as follow by Alléno & Rivoire : « real tribute to Champagne and to the richness of its soil, this block is composed of dark chocolate, praline of sake grounds that goes well with the saltiness of Champagne, seaweed jam for iodates notes and crystallized ginger confit that brings brilliance and freshness. »
And there’s more … both chiefs put it in 6 shamrocks pollinated small boxes – an obvious symbolic turned into a treat for Mother’s Day. This 6 shamrocks small box contains stunning creations with natural jelly and pieces of lemon confit. Some shamrocks that are revealed inside a thin shell of dark chocolate from Ecuador 55%, and filled with fresh pollen from Cistus. Creations without sugar, in order to not ruin this intense and inspired pleasure !
