Description : The distillery that produces Leblon artisanal cachaça (named after a famous beach in Rio) sits among cane fields in the Brazilian highlands of Minas Gerais. The cane is cut by hand and then pressed to obtain a pure fresh juice called “Caldo de Cana”. This pure cane juice is fermented for 15 hours, in order to pass into small copper pot-stills for distillation. The master distiller, a Frenchman who learned his skills in Cognac, then pours the freshly distilled cachaça into Limousin oak barrels that previously contained Cognac. She will stay there for up to 6 months, during which time she will rest and acquire her silky side. At the end of this maturation, the cachaça is assembled and then bottled on site.
