Description : This limited edition Old Tom was made in a former Victorian dairy located in London in the Battersea district. It pays homage to Ralph Dodd, entrepreneur and ingenious spirit who founded The London Distillery Company in 1807. The distillations are carried out on the one hand in a distillation column called “Cristina” and on the other hand in a vacuum still called “Little Albion”. This certified organic gin, which has spent a few weeks in American oak barrels, is made in particular from juniper and bay berries, angelica, cardamom, lemon and licorice. With its notes of juniper, the first nose shows a lot of richness and concentration. The palate is subtly vanilla and spicy (cloves, ginger). The mid-palate is grassy (cut hay) and plump (bay leaf, lime tree). When aired, it continues on ripe (pear, plum) and dry (walnut, almond) fruits.
