Oro, nestled within the idyllic Casanova Gardens and offering breathtaking views of the lagoon, is the beating heart of the Hotel Cipriani Venice’s gastronomy. Today, it stands as a living tribute to the culinary culture of the region
 Chef Vania Ghedini presents dishes rich in authenticity, highlighting Adriatic seafood and the culinary traditions of her childhood. The finely orchestrated menu includes specialties such as guinea fowl with vegetables, Ferrara-style maccheroni timbale, or fish in sweet and sour with onions and raisins, all carefully prepared to awaken the senses of the diners.

When offered the opportunity to take over the direction of Oro, Vania Ghedini admits she felt a certain apprehension. Collaborating with Massimo Bottura, the famous three-starred chef, is a significant challenge, as she confesses: “His name gave me chills.” However, the opportunity was too good to pass up. For Vania Ghedini, it was a “train that must not be missed.” What captivated her about this proposal, beyond Massimo Bottura’s aura, was his vision for Oro: a cuisine rooted in Venetian territory while reflecting their shared Emilia-Romagna origins.

Originally from Ferrara, Vania Ghedini quickly rose through the ranks of haute cuisine, earning a solid reputation thanks to her sincere and straightforward approach to cooking. Before joining Oro, she had already made a name for herself by launching significant projects such as the Sesamo restaurant at the Royal Mansour in Marrakech, as well as her experiences with the prestigious Gruppo Alajmo and the three-starred Le Calandre restaurant near Padua. Her return to Venice, where she had worked at GrancaffĂ© Quadri on St. Mark’s Square, marks a special moment in her career.

In collaboration with Massimo Bottura, she crafts a menu that blends Venetian traditions with inspirations drawn from her travels abroad. For Vania Ghedini, the Cipriani represents a return to Venice, a city that holds a special place in her heart. Having previously worked with the Alajmo family in Marrakech, as well as at GrancaffĂ© Quadri on St. Mark’s Square, she now finds herself in a destination where every corner breathes history and timeless glamour. “Venice is a unique place in the world, and living here is a privilege,” she shares, expressing her deep connection to the city.
