Le Guide Michelin, qui le couronne, note ainsi: « Le restaurant de l’hôtel Castelbrac porte le nom du bateau du commandant Charcot, célèbre explorateur des zones polaires. Né à Dinan, le chef Julien Hennote a lui aussi exploré d’autres horizons (culinaires), comme ceux de la Côte d’Azur et même de la Polynésie. En cuisine, il privilégie les produits du terroir et la pêche côtière durable (coquilles Saint-Jacques et ormeaux de plongée, homard, algues) dans le respect des ressources.
