Back then, the duo was already rising to the occasion through a number of delectable and creative pastry creations, all without an ounce of protein or animal fat. Today, the <em>chef p\u00e2tissier <\/em>is using his expertise to make creations that are 100% vegan.<\/p>\n<p>Perfectly adapted to the brand\u2019s ethical values, the <em>chef p\u00e2tissier <\/em>is actually able to arrive at a real equilibrium &#8211; a work of mastery that results in natural flavors that are tinged with innovation. Micha\u00ebl Bartocetti thus revisits the originality of old traditions in his pastries. Scones and shortbreads, <em>figolus<\/em> and <em>sabl\u00e9s, <\/em>these pastries are not lacking for audacity and promise to ravish food-lovers seeking authenticity. Croustillant M\u00fbre Chocolat, a cocoa and chocolate biscuit made with no flour and animated by a mousse au chocolat, Sabl\u00e9 Noisette de Pi\u00e9mont et Yuzu, where a light and airy mousse covers a heart of praline hazelnut and yuzu jam, or the Sph\u00e8re Ananas Coriandre\u2026 These creations are all veritable odes to lightness, using vegan as a way to eat healthy all while bringing you on a delightful journey of taste discoveries.
