That\u2019s why Dom P\u00e9rignon champagne can only truly accomplish its mission by transcending the obstacles to its vintage perfection. That means taking on each year\u2019s new challenges, and the year 2005 was no small challenge in itself. With four seasons of weather occurring in the space of the harvest period, with each season exceptionally hot and dry, the 2005 vintage will no doubt end up a bit contrasted. There was a temptation therefore to harvest it too early or to throw out the entire batch. Then came the drastic question of selection: for the picking, only the best grapes, pure and intact, could be kept. Glorious quality is the key to a successful vintage. In the end there was only a limited volume of this fruit bursting with the rich sunniness of summer.<\/div>\n<div>\u201cRarity, which is here extreme, is the price to pay to witness a mill\u00e9sime vintage.\u201d This is how Richard Geoffroy sums it up. After a minimum of 9 years of elaboration in their caves, Dom P\u00e9rignon Vintage 2005 is finally ready for tasting. The remarkably rich bouquet arrives in the nostrils in successive waves. First the fruit, intense, more black than red, melts in with silvery minerals, then praline and coriander come to work their magic. This unique wine will tantalize the palate; it\u2019s a nectar of character structured around a focused, firm, and solid ensemble.
