Les Trois Bô: Magnifying the tradition
Located on rue des Tovets in Courchevel 1850, the beautiful restaurant Les Trois Bô is always looking for excellence, without fuss or arrogance. Behind this establishment, it is above all the will of three associates to offer their guests a restaurant, a service, a cuisine, exceptional wines and a moment of conviviality as they themselves have dreamed.
Les Trois Bô is the result of the common desire of Jérôme Caquineau, Eric Tournier and Bernard Magrez to create a place that reflects their image, a place for meetings, shared pleasures and authenticity.
“The idea with Eric (editor’s note: Tournier), my partner, was to create something that did not exist in Courchevel. We like to drink and eat grandma’s good food, hence the idea of this place. There was this idea of serving exceptional products through a high quality and traditional cuisine” explains Jérôme Caquineau.
“The idea was also to introduce people, especially foreign clients, to French tradition: traditional gastronomy, the art of the table, the art of entertaining, etc.” adds Jérôme Caquineau.
“Eric and I asked ourselves the question: what would be the ideal place where we would want to have dinner? Starting with this blank sheet of paper, we tried to project what we considered a form of perfection in Les Trois Bô.”
A true spearhead of the great culinary tradition and a figurehead of the art of impeccable but not arrogant entertaining that is so typical of Courchevel, this establishment is a landmark for gourmets and bon-vivants and one of the emblems of the Tournier House.
A spirit and a vision that can be found engraved even on the restaurant’s beautiful menu: “You can’t make good food if you don’t like people.”

Ribs of beef cooked the old-fashioned way all the time, black meat from the Baltic and other entrecotes are sometimes offered by Franck Metzger to Jérôme Caquineau every week. This allows him to surprise his guests every week with the rarest of flavors.
There are also some Milanese culinary references at Les Trois Bô, a nod from Jérôme Caquineau to his beloved city where he lives part of the year.
