Chef de cave Richard Geoffroy imagines Dom Pérignon vintages by ceaselessly reinventing new territories of wine expression. Catalan chef Ferran Adrià has always pushed the limits of gastronomy. They definitely have something in common; this is where the genesis of their fortuitous meeting is taking shape. The story begins in 2011. In that year, Ferran Adrià announced the closing if his restaurant elBulli. Just for the occasion, the chef wanted to bring the men of Dom Pérignon together around the same table for one last dinner. Around three years later, Ferran Adrià is inaugurating a new project: exploring and decoding the mechanisms of the creative process, striving to lift the curtain on the genomes of creation like a mind alchemist. The project is partly the fruit of Dom Pérignon’s ambition to explore and share their own creative universe. That’s how a three-year collaboration began… or perhaps longer. In reality, Dom Pérignon and the elBulli Foundation are transcribing the DNA of champagne together for an initial three-year contract. Three is also the number of questions that tie this collaboration together.
The primary intention for this exploration is focused on the meaning of “creativity” – its place in the creation process; how does Dom Pérignon champagne innovate with each new vintage? Then, the two artists take on communicating the expression of Dom Pérignon champagne. Finally, with a desire to approach the sensations of the taster even closer, the duo asked themselves: how can Dom Pérignon champagne best be tasted? How could they bring the Dom Pérignon champagne tasting experience to a level on par with the vision of their creator, Dom Pierre Pérignon? Dom Pérignon Decoding is thus a reflection that aims to respond to these questions. With “This is not a dinner”, Dom Pérignon harmonizes with Ferran Adrià’s cuisine to offer the possibility to discover multiple experiences around the tasting of champagne. First off, to provoke a spontaneous emotion: Solo Tasting. Secondly, four scenarios are proposed to discover the multiple facets of the 2005 vintage. From a great richness of taste, it reveals its intensity with a metallic and mineral backdrop. A continuum where structure and texture are in perfect harmony is thus born… This Dom Pérignon and elBulli Foundation experience is able to be discovered now.
