Since September of 2015, afternoon tea at the Shangri-La has reflected the creativity of chef Christophe Moret and his chef pâtissier Michaël Bartocetti – presenting the image of a kitchen that beats to the rhythm of the seasons and nature. Back then, the duo was already rising to the occasion through a number of delectable and creative pastry creations, all without an ounce of protein or animal fat. Today, the chef pâtissier is using his expertise to make creations that are 100% vegan.
Perfectly adapted to the brand’s ethical values, the chef pâtissier is actually able to arrive at a real equilibrium – a work of mastery that results in natural flavors that are tinged with innovation. Michaël Bartocetti thus revisits the originality of old traditions in his pastries. Scones and shortbreads, figolus and sablés, these pastries are not lacking for audacity and promise to ravish food-lovers seeking authenticity. Croustillant Mûre Chocolat, a cocoa and chocolate biscuit made with no flour and animated by a mousse au chocolat, Sablé Noisette de Piémont et Yuzu, where a light and airy mousse covers a heart of praline hazelnut and yuzu jam, or the Sphère Ananas Coriandre… These creations are all veritable odes to lightness, using vegan as a way to eat healthy all while bringing you on a delightful journey of taste discoveries.
